The Instant Pot, an electric pressure cooker, can cook an entire bag of sweet potatoes with the press of a few buttons.

I bought this three pound bag of organic sweet potatoes at Trader Joes for $3.99. I find that these are consistently sweet and tender (without stringy fibers).

I soaked them in water to get the dirt off the skins, followed by a good scrub.

After putting in the metal trivet into the instant pot, one cup of water goes in. The sweet potatoes are then layered on top.

I pressed the manual setting, then adjusted the time to 10 minutes.

Piping hot and tender sweet potatoes now ready! I removed the skins so you can see how delicious they are! To make baby food, just remove all the skins, and smash it with a spoon.

A whole bag of sweet potatoes may take a while to finish, so they can be frozen for later. I took the skins off the sweet potatoes that I wanted to freeze, then put them on a tray lined with plastic saran wrap without touching each other. I put them into the freezer overnight, then into a ziplock bag and stored in the freezer.

Instant Pot Sweet Potatoes

servings: 3 pounds of sweet potatoes
 
1 three-pound bag of organic sweet potatoes
metal trivet (comes with the instant pot)
 
1) To clean the sweet potatoes, soak them in water, then scrub.
2) Put the metal trivet into the instant pot. Add 1 cup of water.
3) Layer the sweet potatoes into the instant pot, starting with the bigger and fatter ones on the bottom.
4) Lock lid, make sure the valve is on.
5) Press "Manual", then adjust time to 10 minutes.
6) Quick release (or natural release if you want them softer). (Follow tips #4 to #6 to safely open the lid.)
7) To freeze: remove the skins, then put the sweet potatoes on a tray lined with plastic saran wrap. After freezing overnight, the sweet potatoes can be stored in a ziplock bag in the freezer.
