I found that the frozen organic boneless and skinless chicken breasts from Trader Joes are really handy to have for quick last-minute meals. Each chicken breast is individually frozen, so you can easily take out however many pieces you need. It costs $5.99/lb, which is a great deal for organic chicken breasts. Each bag has 5-6 pieces, and costs around $13-16.

I took 2 frozen chicken breasts and put it at the bottom of the instant pot (1). Then I chopped up a few carrots and stalks of celery and put it in the pot (2). Next came the herbs. I added 2 cubes of frozen chopped up garlic (from Trader Joes), some dried thyme and salt (3). I poured the whole bag of dried pasta on top (4).

I added water until it covered all the dried pasta (5). I put the lid on, pressed "Manual", then adjusted the cook time to 10 minutes (6).

When the 10 minutes was up, I took the 2 chicken breasts out, cut up the tender chicken and mixed it back into the chicken noodle soup (7).

One Pot Pressure Cooker Chicken Noodle Soup

4-6 servings.

2 frozen chicken breasts
3-4 carrots, chopped into 0.5 inch pieces
3-4 stalks of celery, chopped into 0.5 inch pieces
1 lb dried pasta (17.6oz, 500g)
seasonings (to your taste): 2 cubes of frozen garlic (from Trader Joes), 1 teaspoon dried thyme, salt
Instant Pot (from Amazon)

1) Place the 2 frozen chicken breasts into the inner pot.
2) Add the chopped carrots and celery.
3) Add the seasonings according to your taste: 2 cubes of frozen garlic (from Trader Joes), 1 teaspoon dried thyme and 1 teaspoon salt.
4) Add the entire package of dried pasta.
3) Add enough water to cover the pasta.
5) **Wipe the rim of the inner pot to get rid of any liquid that may compromise the seal of the lid later.**
6) Lock on the lid. Make sure the steam release handle is on "Sealing". Press "Manual", then adjust the time to 10 minutes with the -/+ buttons.
(**Tip: If you use a different kind of pasta, the cook time may be different. Keep in mind you will need about 10 minutes to cook the frozen chicken breast.)
7) When the cooking time is up and the pot beeps, press the "Keep warm/cancel" button to stop the warming function. Immediately quick release the steam by flipping the steam release handle to "Venting". I like to put a kitchen towel over the vent, then using a long kitchen utensil to flip the handle, in case any liquid spews out.
8) After the pressure float valve drops down, indicating the pressure in the pot has gone down to normal, twist open the lid. Be careful of any steam.
9) Take out the 2 chicken breasts, then cut up the chicken into smaller pieces. Mix it back into the chicken noodle soup. Adjust the salt and seasonings in the soup according to taste.
